Description
A delightful and moist pound cake made with 7-UP soda and topped with a zesty lemon-lime glaze, perfect for summer gatherings.

- 3 cups (360 grams) all-purpose flour
- 2 cups (400 grams) granulated sugar
- 1 cup (226 grams) unsalted butter, softened
- 4 large eggs
- 1 cup (240 mL) 7-UP soda
- Zest and juice of 1 lemon
- Zest and juice of 1 lime
- 1 teaspoon baking powder
- A pinch of salt
- 1 cup (120 grams) powdered sugar (for glaze)
- 2 tablespoons fresh lemon-lime juice (for glaze)
Instructions
- Preheat your oven to 325°F (160°C). Grease and flour a bundt or loaf pan.
- Cream together the butter and sugar in a large mixing bowl until fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Gradually mix in the 7-UP until well combined.
- In a separate bowl, sift together the flour, baking powder, and salt. Gradually add to the wet mixture.
- Fold in the lemon and lime zest and juice.
- Pour the batter into the prepared pan and bake for about 60 minutes, or until a toothpick comes out clean.
- Let the cake cool in the pan for 10 minutes, then remove and cool completely on a wire rack.
- Mix powdered sugar and lemon-lime juice for the glaze and drizzle over the cooled cake.
Notes
Store leftover cake wrapped tightly in plastic wrap in the refrigerator for up to 5 days, or freeze wrapped securely for up to three months.
