Ingredients

  • Salmon fillets
  • Fresh garlic
  • Za’atar spice mix
  • Olive oil
  • Fresh lemon juice
  • Assorted seasonal vegetables (bell peppers, zucchini, carrots, broccoli)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the vegetables into bite-sized pieces and toss them with olive oil, salt, and pepper, then spread them on a baking sheet.
  3. In a bowl, mix minced garlic, za’atar, olive oil, and lemon juice, then rub this mixture over the salmon fillets.
  4. Roast the vegetables for about 20 minutes, tossing halfway through.
  5. Add the salmon to the baking sheet skin side down after the vegetables have roasted for about 10 minutes, and bake for an additional 12-15 minutes.
  6. Serve the salmon alongside the roasted veggies, drizzling with extra olive oil or fresh lemon juice and garnishing with herbs, if desired.

Notes

For a quick za’atar substitute, mix dried oregano, thyme, sesame seeds, and a dash of lemon zest.
