Ingredients
- Salmon fillets
- Fresh garlic
- Za’atar spice mix
- Olive oil
- Fresh lemon juice
- Assorted seasonal vegetables (bell peppers, zucchini, carrots, broccoli)
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the vegetables into bite-sized pieces and toss them with olive oil, salt, and pepper, then spread them on a baking sheet.
- In a bowl, mix minced garlic, za’atar, olive oil, and lemon juice, then rub this mixture over the salmon fillets.
- Roast the vegetables for about 20 minutes, tossing halfway through.
- Add the salmon to the baking sheet skin side down after the vegetables have roasted for about 10 minutes, and bake for an additional 12-15 minutes.
- Serve the salmon alongside the roasted veggies, drizzling with extra olive oil or fresh lemon juice and garnishing with herbs, if desired.
Notes
For a quick za’atar substitute, mix dried oregano, thyme, sesame seeds, and a dash of lemon zest.
