- 2 large eggs

- 1 cup chopped almonds, lightly toasted
- 1 cup toffee bits or chopped English toffee
- 1 teaspoon baking soda
- A pinch of salt
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream together the butter, brown sugar, and granulated sugar until fluffy.
- Add eggs and vanilla extract, mixing until well combined.
- In another bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry mixture to the wet mixture, folding until just combined.
- Gently fold in the chopped almonds and toffee bits.
- Scoop the dough onto the prepared baking sheet, spacing them 2 inches apart.
- Bake for 10–12 minutes until the edges are lightly golden.
- Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For added texture, chill the dough if too soft before baking. Avoid overbaking; cookies will firm up as they cool.
