- 12 large eggs
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- Salt to taste
- Black pepper to taste
- Paprika for garnish
- Fresh chives or dill for garnish
Instructions
- Begin by boiling the eggs. Cover them with water, bring to a boil, and then reduce to a simmer for about 10 minutes.
- Transfer the boiled eggs to an ice bath to cool.
- Once cooled, peel and halve the eggs. Remove the yolks and place them in a bowl.
- Mash the yolks with mayonnaise, Dijon mustard, salt, and pepper until smooth. Adjust seasoning to taste.
- Fill the egg white halves with the yolk mixture using a piping bag or spoon.
- Sprinkle with paprika and top with fresh herbs.
- Refrigerate for at least 30 minutes before serving to allow flavors to meld.
Notes
For a lighter version, substitute Greek yogurt for mayonnaise. Enjoy fresh or prepare the night before for convenience.
