Instructions

  1. Begin by boiling the eggs. Cover them with water, bring to a boil, and then reduce to a simmer for about 10 minutes.
  2. Transfer the boiled eggs to an ice bath to cool.
  3. Once cooled, peel and halve the eggs. Remove the yolks and place them in a bowl.
  4. Mash the yolks with mayonnaise, Dijon mustard, salt, and pepper until smooth. Adjust seasoning to taste.
  5. Fill the egg white halves with the yolk mixture using a piping bag or spoon.
  6. Sprinkle with paprika and top with fresh herbs.
  7. Refrigerate for at least 30 minutes before serving to allow flavors to meld.

Notes
