Description

A comforting dish of Tex-Mex cubed steak enchiladas that blends hearty flavors with vibrant seasonings, perfect for family gatherings.

Ingredients

Scale
  • 1 lb cubed steak (or substitute with ground beef, chicken, or mushrooms)
  • 8 corn or flour tortillas
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 cup tomato sauce (or homemade salsa)
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • Fresh cilantro, for garnish

Instructions

  1. In a large skillet over medium heat, add a drizzle of olive oil. Sauté diced onions and minced garlic until fragrant.
  2. Add cubed steak, season with salt, chili powder, and cumin. Cook for about 10 minutes until the steak is cooked through.
  3. Pour in tomato sauce or salsa, allowing it to simmer for another 5 minutes.
  4. Warm tortillas until pliable. Fill each tortilla with a spoonful of the beef mixture and cheese, then roll tightly.
  5. Place filled tortillas seam-side down in a greased baking dish. Pour remaining sauce over the top and sprinkle with extra cheese.
  6. Preheat oven to 350°F (175°C) and bake for 20-25 minutes until cheese is melted and bubbly.
  7. Garnish with fresh cilantro and serve with sour cream or avocado.

Notes

For spiciness, feel free to add jalapeños. For a vegetarian option, swap the steak for black beans. Let sauce simmer for richer flavors.
