- 1 lb ground beef or turkey (or plant-based alternatives)
- 1 packet taco seasoning
- 8 oz cream cheese
- 1 cup shredded cheddar cheese
- 1 cup diced tomatoes
- 1 cup chopped bell peppers
- 1 cup crushed tortilla chips (for topping)
- 2 eggs
- ½ cup milk
- 1 ½ cups all-purpose flour
- 1 tbsp baking powder
- 1 tsp salt
- Optional garnishes: cilantro and sour cream
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, brown the ground beef (or turkey) over medium heat. Drain excess fat and stir in taco seasoning with a splash of water. Cook until fragrant, then add diced tomatoes and bell peppers and soften them slightly.
- In a mixing bowl, beat together eggs and milk until frothy, then add flour, baking powder, and salt, mixing until just combined.
- Fold the meat mixture into the batter, followed by the cream cheese.
- Grease a muffin tin and fill each cup about three-quarters full. Sprinkle shredded cheese on top, followed by crushed tortilla chips.
- Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
- Let them cool slightly before removing from the tin, and garnish as desired.
Notes
You can substitute ground chicken or a hearty black bean mix for a vegetarian option. Serve fresh out of the oven with a side salad or homemade guacamole.
