- 1 cup rolled oats
- 1/2 cup nut butter (almond or peanut)
- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract
- 2 tbsp chia seeds or flaxseeds
- 1/4 cup coconut flakes (optional)
Instructions
- Wash strawberries thoroughly, remove the stem, and chop them into small pieces.
- In a large bowl, combine nut butter, honey (or maple syrup), and vanilla extract. Stir until smooth.
- In a separate bowl, mix the rolled oats, chia seeds, and coconut flakes.
- Gradually add the dry mixture to the wet mixture, stirring until well combined. Fold in the chopped strawberries gently.
- Roll small amounts of the mixture into bite-sized balls and place on a parchment-lined tray.
- Refrigerate for at least 30 minutes to firm up.
- Enjoy as a snack or store in the fridge for up to a week.
Notes
For added flavor, roll the bites in extra coconut or chopped nuts before refrigerating. Adjust sweetness by adding more honey or syrup to taste.
