Description

A healthier twist on the classic strawberry shortcake, these energy bites are packed with flavor and nutrients, making them perfect for snacking or sharing.

Ingredients

Scale
  • 1 cup fresh strawberries, chopped
  • 1 cup rolled oats
  • 1/2 cup nut butter (almond or peanut)
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 2 tbsp chia seeds or flaxseeds
  • 1/4 cup coconut flakes (optional)

Instructions

  1. Wash strawberries thoroughly, remove the stem, and chop them into small pieces.
  2. In a large bowl, combine nut butter, honey (or maple syrup), and vanilla extract. Stir until smooth.
  3. In a separate bowl, mix the rolled oats, chia seeds, and coconut flakes.
  4. Gradually add the dry mixture to the wet mixture, stirring until well combined. Fold in the chopped strawberries gently.
  5. Roll small amounts of the mixture into bite-sized balls and place on a parchment-lined tray.
  6. Refrigerate for at least 30 minutes to firm up.
  7. Enjoy as a snack or store in the fridge for up to a week.

Notes

For added flavor, roll the bites in extra coconut or chopped nuts before refrigerating. Adjust sweetness by adding more honey or syrup to taste.
