- 1 lb fresh shrimp, peeled and deveined
- 1 cup stone-ground grits
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 cup aged cheddar cheese, shredded
- 2 tbsp butter
- 1 cup onion, chopped
- 2 cloves garlic, minced
- Fresh parsley, for garnish
- Salt and pepper, to taste
- Cayenne pepper, to taste
Instructions
- In a medium saucepan, bring chicken broth to a gentle boil. Gradually whisk in the grits, reduce the heat, and let simmer for about 25-30 minutes, stirring occasionally.
- Add heavy cream, cheddar cheese, and butter to the grits, and season with salt and pepper to taste.
- In a large skillet, melt butter over medium-high heat. Sauté onion and garlic until translucent.
- Add shrimp, season with salt, pepper, and cayenne. Cook until shrimp turn pink, about 3-5 minutes.
- Ladle grits onto plates, top with sautéed shrimp, and garnish with parsley and extra cheddar.
