Ingredients

  • 1 can of salmon, drained and flaked
  • 1 cup zucchini, grated and excess moisture squeezed out
  • 1/2 cup breadcrumbs
  • 2 eggs
  • 2 tablespoons fresh dill or parsley, chopped
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Drain and flake the salmon if using canned. Grate the zucchini and squeeze out excess moisture.
  2. In a large bowl, mix together the salmon, zucchini, breadcrumbs, eggs, herbs, garlic, salt, and pepper.
  3. Form the mixture into patties, about the size of your palm.
  4. Refrigerate the patties for 30 minutes to help them hold together while cooking.
  5. Heat olive oil in a skillet over medium heat and cook each patty until golden brown, about 4-5 minutes on each side.
  6. Serve warm, garnished with herbs or a squeeze of lemon juice if desired.

Notes

Refrigerating the patties before cooking helps prevent them from falling apart. Serve with a salad or yogurt sauce for a complete meal.
