Ingredients

- 1 can of salmon, drained and flaked
- 1 cup zucchini, grated and excess moisture squeezed out
- 1/2 cup breadcrumbs
- 2 eggs
- 2 tablespoons fresh dill or parsley, chopped
- 1 clove garlic, minced
- Salt and pepper to taste
- Olive oil for frying
Instructions
- Drain and flake the salmon if using canned. Grate the zucchini and squeeze out excess moisture.
- In a large bowl, mix together the salmon, zucchini, breadcrumbs, eggs, herbs, garlic, salt, and pepper.
- Form the mixture into patties, about the size of your palm.
- Refrigerate the patties for 30 minutes to help them hold together while cooking.
- Heat olive oil in a skillet over medium heat and cook each patty until golden brown, about 4-5 minutes on each side.
- Serve warm, garnished with herbs or a squeeze of lemon juice if desired.
Notes
Refrigerating the patties before cooking helps prevent them from falling apart. Serve with a salad or yogurt sauce for a complete meal.
