- 4 large sweet potatoes
- 1 cup sugar
- ½ cup butter, melted
- ½ cup milk
- 2 eggs, beaten
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1 cup brown sugar
- ⅓ cup flour
- ⅓ cup butter, melted
- 1 cup chopped pecans
- Pinch of salt
Instructions
- Peel and boil the sweet potatoes until tender, about 20-30 minutes. Drain and mash until smooth.
- Add melted butter, sugar, milk, beaten eggs, vanilla extract, and cinnamon to the sweet potato and mix until combined.
- Pour the sweet potato mixture into a greased baking dish and smooth the top.
- In another bowl, mix brown sugar, flour, melted butter, and chopped pecans until coarse and crumbly.
- Sprinkle the pecan topping over the sweet potato mixture.
- Bake at 350°F (175°C) for 25-30 minutes, or until the topping is golden and crunchy.
Notes
Let the casserole cool for a few minutes after baking to allow the flavors to meld and the topping to set.
