- 1 ½ cups buttermilk
- 1 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon red food coloring
- 8 oz cream cheese, room temperature
- ½ cup unsalted butter, room temperature
- 4 cups powdered sugar
Instructions
- Preheat the oven to 350°F (175°C). Prepare your cake pans by greasing them with butter and lining them with parchment paper.
- In one bowl, sift together the flour, cocoa powder, baking soda, and salt.
- In another bowl, whisk together the buttermilk, vegetable oil, eggs, vanilla extract, and red food coloring until well mixed.
- Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined to avoid overmixing.
- Pour the batter evenly into the prepared pans and gently tap each pan to release air bubbles.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Once baked, allow the cakes to cool in the pans for about 10 minutes, then transfer to a wire rack to cool completely.
- To prepare the frosting, whip the cream cheese and unsalted butter until soft and creamy, then gradually add the powdered sugar and vanilla until reaching desired sweetness.
- Once cooled, frost the layers generously, and decorate as desired.
Notes
To store leftovers, keep in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. For longer storage, freeze individual slices wrapped tightly for up to 3 months.
