- 1 pound red beans
- 1 pound andouille sausage (or smoked sausage, or vegan sausage)
- 1 onion, diced
- 1 green bell pepper, diced
- 1 stalk celery, diced
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 bay leaf
- 1 teaspoon paprika
- 6 cups vegetable or chicken broth
- 2 cups long-grain white rice
- Salt and pepper to taste
Instructions
- Rinse and soak the beans overnight in water.
- In a large pot, heat a tablespoon of oil and sauté the diced onion, green bell pepper, and celery for 5-7 minutes until tender.
- Add garlic, thyme, bay leaf, and paprika; cook for another 2-3 minutes.
- If using, add sliced andouille sausage and brown for a few minutes.
- Drain the soaked beans and add to the pot with the broth; bring to a boil, then reduce to a simmer.
- Cover and let it simmer for 1.5 to 2 hours, stirring occasionally.
- Meanwhile, cook the rice as per package instructions.
- When done, season beans with salt and pepper, remove the bay leaf, and serve over a bed of rice.
Notes
For a vegetarian version, skip the sausage and add mushrooms for texture. Stir occasionally to prevent sticking and achieve even cooking.
