- 4 cups all-purpose flour
- 1 cup fresh or frozen raspberries
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 1/4 teaspoons active dry yeast
- 1 cup milk, warmed
- 2 eggs
- 2 teaspoons ground cinnamon
- Zest and juice of 1 lemon
Instructions
- In a warm bowl, combine the warmed milk and sugar, then sprinkle yeast over the top. Let it stand for about 5 minutes, until frothy.
- Add melted butter, eggs, and a pinch of salt to the yeast mixture. Stir until combined.
- Gradually add in the flour, mixing with a spatula until it forms a dough. Knead on a floured surface for 5-10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place until doubled in size, about 60 minutes.
- Roll the dough out into a rectangle. Spread softened butter, sprinkle sugar and cinnamon, and scatter raspberries on top.
- Roll the dough into a tight cylinder and slice into 12 equal pieces. Place them in a greased baking dish.
- Cover and let the rolls rise for 30 minutes.
- Preheat oven to 350°F (175°C) and bake for 25 minutes until golden brown.
- Mix powdered sugar, lemon juice, and zest until smooth to prepare the glaze.
- Let the rolls cool slightly, then drizzle with the lemon glaze.
Notes
For a dairy-free version, use almond milk and a vegan butter substitute. Experiment with different berries if desired.
