Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together softened butter, brown sugar, and granulated sugar until light and fluffy; add pumpkin puree and egg, mixing well.
- In a separate bowl, whisk together flour, baking soda, baking powder, pumpkin pie spice, and salt.
- Gradually mix dry ingredients into wet mixture until just combined.
- If using, fold in chocolate chips or walnuts.
- Drop mounds of dough onto prepared baking sheets, spacing them about two inches apart.
- Bake for 10-12 minutes, until edges are lightly golden and centers appear slightly underbaked.
- Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
