Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup butter, softened
  • 3/4 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 8 oz melting chocolate
  • Popsicle sticks

Instructions

  1. Cream the butter and brown sugar together until fluffy. Mix in the pumpkin puree, spices, and salt. Gradually add the flour until combined.
  2. Chill the dough in the refrigerator for about 30 minutes.
  3. Roll the chilled dough into small balls, insert popsicle sticks, and place on a parchment-lined baking sheet.
  4. Freeze for at least 1 hour.
  5. Melt the chocolate in a double boiler or microwave.
  6. Dip each frozen pop in melted chocolate, then roll in crushed nuts or sprinkles as desired.
  7. Set the coated pops back on the parchment-lined sheet and refrigerate for 15 minutes to allow the chocolate to set.

Notes

For a dairy-free version, substitute coconut oil for butter. For gluten-free, use almond flour.
