- 3–4 ripe bananas
- 2 cups all-purpose flour (or whole wheat/gluten-free)
- 1 cup granulated sugar (or brown sugar)
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs (or flaxseed meal/applesauce for vegan)
- 1/2 cup unsalted butter (melted or vegetable oil)
- 1 cup fresh strawberries or raspberries (pureed)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- Mash the ripe bananas in a bowl until smooth. If using fresh berries, blend until pureed.
- In another bowl, combine flour, baking soda, and salt.
- In a large mixing bowl, whisk melted butter and sugar until blended. Add eggs and mashed bananas, stirring until combined.
- Gradually fold dry ingredients into the banana mixture until just combined.
- Pour half of the batter into the prepared loaf pan. Drop spoonfuls of berry puree on top and gently swirl with a knife. Add remaining batter and swirl again.
- Bake for 55-60 minutes or until a toothpick comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
Allow the bread to cool in the pan to maintain its structure and sweetness. Serve with cream cheese or butter for added richness.
