  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs (or flaxseed meal/applesauce for vegan)
  • 1/2 cup unsalted butter (melted or vegetable oil)
  • 1 cup fresh strawberries or raspberries (pureed)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Mash the ripe bananas in a bowl until smooth. If using fresh berries, blend until pureed.
  3. In another bowl, combine flour, baking soda, and salt.
  4. In a large mixing bowl, whisk melted butter and sugar until blended. Add eggs and mashed bananas, stirring until combined.
  5. Gradually fold dry ingredients into the banana mixture until just combined.
  6. Pour half of the batter into the prepared loaf pan. Drop spoonfuls of berry puree on top and gently swirl with a knife. Add remaining batter and swirl again.
  7. Bake for 55-60 minutes or until a toothpick comes out clean.
  8. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Allow the bread to cool in the pan to maintain its structure and sweetness. Serve with cream cheese or butter for added richness.
