Ingredients

- 1 cup creamy peanut butter
- 4 ounces unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 1.5 cups semisweet chocolate chips
- Sea salt (optional, for sprinkling)
Instructions
- In a mixing bowl, combine peanut butter, unsalted butter, powdered sugar, and vanilla extract until creamy and thick.
- Roll the mixture into 1-inch balls and place them on parchment paper. Refrigerate for about 30 minutes.
- Melt chocolate chips in a microwave-safe bowl using 30-second intervals, stirring until smooth.
- Dip each chilled ball into the melted chocolate using a toothpick to help, then tap off any excess chocolate.
- Place the coated buckeyes back on parchment paper and refrigerate until set, about 30 minutes.
- Remove the toothpicks and enjoy!
Notes
For a unique twist, consider adding a hint of sea salt or drizzles of melted white chocolate on top.
