Instructions

  1. In a mixing bowl, combine peanut butter, unsalted butter, powdered sugar, and vanilla extract until creamy and thick.
  2. Roll the mixture into 1-inch balls and place them on parchment paper. Refrigerate for about 30 minutes.
  3. Melt chocolate chips in a microwave-safe bowl using 30-second intervals, stirring until smooth.
  4. Dip each chilled ball into the melted chocolate using a toothpick to help, then tap off any excess chocolate.
  5. Place the coated buckeyes back on parchment paper and refrigerate until set, about 30 minutes.
  6. Remove the toothpicks and enjoy!
