- 1 lb ground beef or Italian sausage (or turkey/plant-based alternative)
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 2 tbsp tomato paste
- 4 cups fresh spinach
- 8 lasagna sheets, broken into pieces
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- Fresh basil and oregano (or dried versions)
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Heat olive oil in a large pot over medium heat. Sauté diced onion until translucent, then add minced garlic for the last minute.
- Add ground meat, breaking it apart with a spoon, and cook until browned. Season with salt, pepper, and herbs.
- Stir in crushed tomatoes and tomato paste, simulating the mixture and adding a splash of broth if desired.
- Add broken lasagna noodles, making sure they are submerged. Cover and cook until pasta is tender, stirring occasionally.
- Fold in fresh spinach until wilted.
- Dollop ricotta and sprinkle mozzarella on top, allowing it to melt before serving.
Notes
For a thicker soup, reduce broth; for a thinner soup, add more. Taste frequently to adjust seasoning.
