  • 1/2 cup protein powder (vanilla or chocolate)

  • 2 large eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 325°F (162°C). Grease a skillet or baking dish.
  2. Crush the Biscoff cookies into fine crumbs and mix with melted butter. Press into the base of the dish.
  3. Beat the cream cheese until smooth, then incorporate Greek yogurt. Gradually mix in protein powder, sugar, and eggs until smooth.
  4. Add vanilla extract and mix gently.
  5. Pour cheesecake mixture over the crust and bake for 30-35 minutes until set.
  6. Cool at room temperature, then refrigerate for at least 4 hours or overnight.
