Description
A comforting one-pan pasta dish with creamy tomatoes and fresh spinach that brings people together.
Ingredients

- 8 oz pasta (penne, fusilli, or spaghetti)
- 1 can diced tomatoes
- 1 cup heavy cream (or half-and-half, or coconut cream)
- 4 cups fresh spinach (or kale or arugula)
- 2 cloves garlic, minced
- 1 onion, diced
- 2 tbsp olive oil
- 1/2 cup grated parmesan cheese
- Fresh basil or dried Italian herbs
- Salt and pepper to taste
Instructions
- In a large skillet, heat olive oil over medium heat. Add minced garlic and diced onion, sauté until fragrant and golden.
- Pour in the canned tomatoes and their juices. Let simmer to reduce slightly.
- Toss in the uncooked pasta and add enough water or broth to cover it by about an inch. Bring to a boil.
- Lower heat and let it simmer, stirring occasionally, until the pasta is al dente and most liquid is absorbed.
- Lower the heat and stir in the cream and fresh spinach until the spinach wilts.
- Add grated parmesan and fresh basil, adjust seasoning as needed, and mix gently.
- Scoop into bowls, top with extra cheese and olive oil, and serve with a salad or garlic bread.
Notes
Feel free to experiment with different vegetables or add a pinch of red pepper flakes for heat.
