  • 1 cup whipped cream (homemade or store-bought)

Instructions

  1. In a medium saucepan, combine 2 cups of milk, sugar, and a pinch of salt over medium heat. Stir until the sugar dissolves and the mixture begins to steam but not boil.
  2. In a separate bowl, whisk together the cornstarch and remaining 1 cup of milk until smooth. Gradually add this mixture to the hot milk mixture, stirring constantly until it thickens—about 5 minutes. Turn off the heat and stir in the vanilla extract.
  3. In a large bowl, lightly beat the eggs. Gradually pour a small amount of the hot pudding mixture into the eggs while whisking to temper them, then return the egg mixture to the saucepan, stirring continuously until fully combined.
  4. Allow the pudding to cool slightly, then layer the pudding with sliced bananas in a serving dish, starting with a layer of bananas followed by pudding, and repeat until reaching the top.
  5. Cover the pudding with plastic wrap and refrigerate for at least 4 hours. Just before serving, top with whipped cream and crushed vanilla wafers for crunch.

Notes

Use firm bananas for the best flavor and presentation. Avoid overcooking the pudding to prevent a grainy texture.
