- 4 ripe bananas, sliced
- 3 cups whole milk (or almond/coconut milk)
- 3/4 cup granulated sugar (or honey/maple syrup)
- 1/4 cup cornstarch
- 1 tsp pure vanilla extract
- 3 large eggs (or pasteurized eggs)
- 1 cup whipped cream (homemade or store-bought)
Instructions
- In a medium saucepan, combine 2 cups of milk, sugar, and a pinch of salt over medium heat. Stir until the sugar dissolves and the mixture begins to steam but not boil.
- In a separate bowl, whisk together the cornstarch and remaining 1 cup of milk until smooth. Gradually add this mixture to the hot milk mixture, stirring constantly until it thickens—about 5 minutes. Turn off the heat and stir in the vanilla extract.
- In a large bowl, lightly beat the eggs. Gradually pour a small amount of the hot pudding mixture into the eggs while whisking to temper them, then return the egg mixture to the saucepan, stirring continuously until fully combined.
- Allow the pudding to cool slightly, then layer the pudding with sliced bananas in a serving dish, starting with a layer of bananas followed by pudding, and repeat until reaching the top.
- Cover the pudding with plastic wrap and refrigerate for at least 4 hours. Just before serving, top with whipped cream and crushed vanilla wafers for crunch.
Notes
Use firm bananas for the best flavor and presentation. Avoid overcooking the pudding to prevent a grainy texture.
