- 1 1/2 cups dark chocolate, chopped
- 1/2 cup coconut oil
- 3/4 cup almond butter
- 1/3 cup maple syrup
- 1 cup raspberries, mashed slightly
- 1/3 cup chia seeds
- 1 tsp vanilla extract
- Pinch of sea salt
- Optional: 1/2 cup finely chopped toasted hazelnuts or buttery biscuit crumbs
Instructions
- First, melt the chocolate and coconut oil in a heatproof bowl over gently simmering water, and stir until smooth. Then remove from heat.
- Next, whisk the almond butter, maple syrup, vanilla, and salt into the melted chocolate until you achieve a glossy, even mixture.
- Meanwhile, fold the mashed raspberries into the chocolate-nut mixture so they streak the batter but do not dissolve completely. Then fold in the chia seeds; they will absorb moisture and thicken as the mixture chills.
- Carefully spoon the mixture into silicone molds or use a parchment-lined mini muffin tin. Also, press a few whole raspberries into the top for decoration if you like.
- Chill the bites in the refrigerator for at least 2 hours, or freeze for 30–45 minutes for a firmer center. Finally, pop them out of the molds and store in an airtight container.
Notes
For a smoother texture, blend the raspberries before folding them in. Handle frozen bites briefly with warm hands to prevent melting.
