Description

Delicious and refreshing no-bake protein balls that combine the flavors of lemon cheesecake for a nutritious snack.

Ingredients

Scale
  • 1 cup rolled oats
  • ½ cup creamy almond or peanut butter
  • 1 cup cream cheese, softened
  • ¼ cup pure maple syrup or honey
  • Zest of one lemon
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • Optional: ½ cup chocolate chips or chopped nuts

Instructions

  1. In a large mixing bowl, add the rolled oats, almond butter, cream cheese, maple syrup, lemon zest, lemon juice, and vanilla extract. Mix until a sticky dough forms.
  2. Take a tablespoon of the mixture and roll it between your palms to form a ball. Repeat until you’ve used up all the mixture.
  3. Place the balls on a parchment-lined baking sheet and refrigerate for at least 30 minutes.
  4. Enjoy them right away or transfer them to an airtight container. They can last in the fridge for about a week or freeze for up to three months.

Notes

Chill them longer for a firmer texture. Experiment with add-ins like cranberries or seeds for customized flavors.
