Ingredients

- 1 cup rolled oats
- ½ cup creamy almond or peanut butter
- 1 cup cream cheese, softened
- ¼ cup pure maple syrup or honey
- Zest of one lemon
- 2 tablespoons fresh lemon juice
- 1 teaspoon vanilla extract
- Optional: ½ cup chocolate chips or chopped nuts
Instructions
- In a large mixing bowl, add the rolled oats, almond butter, cream cheese, maple syrup, lemon zest, lemon juice, and vanilla extract. Mix until a sticky dough forms.
- Take a tablespoon of the mixture and roll it between your palms to form a ball. Repeat until you’ve used up all the mixture.
- Place the balls on a parchment-lined baking sheet and refrigerate for at least 30 minutes.
- Enjoy them right away or transfer them to an airtight container. They can last in the fridge for about a week or freeze for up to three months.

Chill them longer for a firmer texture. Experiment with add-ins like cranberries or seeds for customized flavors.
