Instructions
- Grate fresh carrots until you have about 3 cups.
- In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In a large bowl, mix granulated sugar, brown sugar, and vegetable oil until combined. Add eggs one at a time.
- Gradually add dry mixture to wet ingredients, folding gently.
- Fold in carrots and any optional add-ins.
- Pour the batter into a greased 9×13 inch pan or two 9-inch round cake pans.
- Bake in a preheated oven at 350°F (175°C) for 25-30 minutes.
- Allow cakes to cool for 10 minutes, then transfer to a wire rack to cool completely.
- For frosting, beat together cream cheese and butter, add powdered sugar and vanilla until fluffy.
- Assemble cake layers and frost with cream cheese frosting.
