- 2 cups all-purpose flour
- 1/2 cup sugar
- 1/2 tsp salt
- 3/4 cup cold butter, diced
- 3–4 tbsp icy water
- 3 cups tart apples (like Granny Smith or Honeycrisp), thinly sliced
- 2 tbsp butter (for sautéing)
- 1/4 cup sugar (for apples)
- 1 cup cream
- 1 vanilla pod
Instructions
- Preheat oven to 180°C (350°F).
- Make the pastry: combine flour, sugar, and salt; rub in butter until resembling fine breadcrumbs.
- Add icy water, one tablespoon at a time, to form a cohesive dough.
- Wrap the dough in cling film and chill for 1 hour.
- Sauté sliced apples with butter and sugar until caramelized.
- Warm cream in a saucepan, scrape in the seeds of the vanilla pod.
- Roll out the dough, cut into circles, and press into a greased muffin tin.
- Fill each pastry shell with sautéed apples and top with vanilla cream.
- Bake for 20-25 minutes until golden.
- Cool slightly before serving.
Notes
Ensure the pastry remains cold for flakiness. Avoid overmixing to prevent toughness. Serve warm with ice cream or crème fraîche.
