  • 1 cup cream
  • 1 vanilla pod

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Make the pastry: combine flour, sugar, and salt; rub in butter until resembling fine breadcrumbs.
  3. Add icy water, one tablespoon at a time, to form a cohesive dough.
  4. Wrap the dough in cling film and chill for 1 hour.
  5. Sauté sliced apples with butter and sugar until caramelized.
  6. Warm cream in a saucepan, scrape in the seeds of the vanilla pod.
  7. Roll out the dough, cut into circles, and press into a greased muffin tin.
  8. Fill each pastry shell with sautéed apples and top with vanilla cream.
  9. Bake for 20-25 minutes until golden.
  10. Cool slightly before serving.
