Instructions
- Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by lining them with parchment paper and greasing the sides.
- Cream together the butter and sugar until light and airy, about 4-5 minutes.
- Beat in the eggs one at a time, ensuring each is fully incorporated.
- Incorporate the flour and baking powder, alternating with the milk until just combined.
- Pour the batter into the prepared cake pans and bake for 25-30 minutes, or until a toothpick comes out clean.
- Let the cakes cool completely.
- Whip the cream with powdered sugar and vanilla until stiff peaks form.
- Layer the cooled cakes with whipped cream and diced tropical fruits.
- Cover with remaining cream and top with more fruits or toasted coconut if desired.
