Ingredients

- 4 salmon fillets
- 1/2 cup feta cheese, crumbled
- 4 cups mixed salad greens
- 1 cucumber, chopped
- 1 bell pepper, chopped
- 1/2 red onion, thinly sliced
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Fresh herbs (basil, parsley, or dill)
Instructions
- Preheat your oven to 400°F (200°C). Season the salmon with olive oil, salt, and pepper. Bake for about 12-15 minutes, or until the fish flakes easily with a fork.
- While the salmon is cooking, chop your cucumber, bell peppers, and onion. Optionally, add cherry tomatoes.
- In a small bowl, whisk together olive oil, lemon juice, salt, pepper, and garlic powder.
- In a large bowl, mix the salad greens with the chopped veggies. Flake the cooked salmon into chunks and add to the bowl.
- Crumble feta cheese on top and drizzle the dressing over everything. Toss gently and serve immediately.

To maintain freshness, prepare the dressing separately and toss before serving.
