- 2 large ripe bananas, mashed
- 1 cup fresh cherries, pitted and chopped (or use frozen)
- 1 ½ cups all-purpose flour
- ¾ cup sugar (white or brown)
- 1 tsp baking powder
- ½ tsp baking soda
- A pinch of salt
- 1 large egg (or flax egg for a vegan option)
- ½ cup unsalted butter, melted (or coconut oil)
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Prepare a muffin tin with paper liners or grease it lightly.
- Mash the ripe bananas in a mixing bowl with a fork until smooth.
- Add the beaten egg, melted butter, and vanilla extract to the mashed bananas and mix until blended.
- In a separate bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
- Fold in the chopped cherries carefully to avoid breaking them.
- Evenly distribute the muffin batter into the prepared muffin tin, filling each cup about three-quarters full.
- Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
- Allow the muffins to cool for a few minutes before transferring them to a wire rack.
Notes
Avoid overmixing the batter for tender muffins. Store in an airtight container at room temperature for up to three days.
