  • Lime juice, to taste
  • 1 tbsp oil for cooking
  • 2 tbsp soy sauce (for glaze)
  • 1 tbsp sesame seeds (for glaze)
  • Chopped green onions (for garnish)

Instructions

  1. Prepare the Pink Rice: Rinse rice until clear, cook with beet juice for color, season with salt and lime.
  2. Make the Meatballs: Combine turkey, garlic, honey, bread crumbs, and egg. Mix gently, avoiding overmixing.
  3. Shape the Meatballs: Form 1-inch meatballs using wet hands and place on parchment-lined baking tray.
  4. Cook the Meatballs: Heat oil in a skillet, cook meatballs for 8-10 minutes until golden and 165°F (75°C).
  5. Glaze and Serve: In skillet, mix honey, soy sauce, and sesame seeds for glaze. Toss meatballs in glaze, serve over pink rice and garnish with green onions.

Notes

Allow meatballs to rest for a few minutes after cooking to retain moisture. Adjust sweetness and seasonings to taste.
