A comforting loaf that brings together the sweetness of bananas and honey with the tartness of apples and hearty oats.


Ingredients

  • 2 ripe bananas
  • 1 cup honey
  • 2 cups rolled oats
  • 1 cup diced apples
  • 1/2 cup milk (almond, oat, or coconut)
  • 1/2 cup walnuts or pecans (optional)
  • 1 tsp cinnamon
  • 1/2 tsp baking powder

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. In a mixing bowl, mash the ripe bananas until smooth. Stir in honey and milk until well combined.
  3. In another bowl, mix rolled oats, diced apples, baking powder, and cinnamon. If using nuts, mix them in now.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  5. Pour the mixture into the prepared loaf pan and smooth out the top.
  6. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For added flavor, consider adding a splash of vanilla extract or a handful of dried cranberries.
