A comforting loaf that brings together the sweetness of bananas and honey with the tartness of apples and hearty oats.

- 2 ripe bananas
- 1 cup honey
- 2 cups rolled oats
- 1 cup diced apples
- 1/2 cup milk (almond, oat, or coconut)
- 1/2 cup walnuts or pecans (optional)
- 1 tsp cinnamon
- 1/2 tsp baking powder
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- In a mixing bowl, mash the ripe bananas until smooth. Stir in honey and milk until well combined.
- In another bowl, mix rolled oats, diced apples, baking powder, and cinnamon. If using nuts, mix them in now.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Pour the mixture into the prepared loaf pan and smooth out the top.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
For added flavor, consider adding a splash of vanilla extract or a handful of dried cranberries.
