Ingredients

  • 1 pound ground turkey
  • 1 small onion, finely chopped
  • 2 cloves fresh garlic, minced
  • 2 tablespoons fresh sage, finely chopped
  • 2 tablespoons fresh thyme, finely chopped
  • Salt and pepper to taste
  • 1 tablespoon olive oil (or butter)
  • Optional: crushed red pepper or mushrooms

Instructions

  1. In a mixing bowl, combine ground turkey, chopped onion, minced garlic, herbs, salt, and pepper. Mix until just combined.
  2. If adding mushrooms, sauté them in olive oil first until golden brown, then cool before adding.
  3. Form mixture into patties or links, about 1/2-inch thick.
  4. Heat a skillet over medium heat and add olive oil or butter.
  5. Cook sausages for 4-5 minutes on each side until browned and reaching an internal temperature of 165°F.
  6. Serve immediately or let rest for a few minutes before plating.

Notes

Avoid over-mixing the sausage mixture to maintain tenderness. Experiment with cooking fats and adjust seasoning to taste.
