Ingredients

- 1 pound ground turkey
- 1 small onion, finely chopped
- 2 cloves fresh garlic, minced
- 2 tablespoons fresh sage, finely chopped
- 2 tablespoons fresh thyme, finely chopped
- Salt and pepper to taste
- 1 tablespoon olive oil (or butter)
- Optional: crushed red pepper or mushrooms
Instructions
- In a mixing bowl, combine ground turkey, chopped onion, minced garlic, herbs, salt, and pepper. Mix until just combined.
- If adding mushrooms, sauté them in olive oil first until golden brown, then cool before adding.
- Form mixture into patties or links, about 1/2-inch thick.
- Heat a skillet over medium heat and add olive oil or butter.
- Cook sausages for 4-5 minutes on each side until browned and reaching an internal temperature of 165°F.
- Serve immediately or let rest for a few minutes before plating.
Notes
Avoid over-mixing the sausage mixture to maintain tenderness. Experiment with cooking fats and adjust seasoning to taste.
