A delicious high-protein twist on classic mac and cheese, merging buffalo flavor with creamy cheese and tender chicken.

- 8 oz elbow macaroni
- 2 cups cooked grilled or baked chicken, chopped
- 1/2 cup buffalo sauce
- 1 cup sharp cheddar cheese, shredded
- 1/2 cup cream cheese
- 1/2 cup onions, chopped
- 2 cloves garlic, minced
- 2 cups whole milk
- 2 tbsp butter
- 1/4 cup flour
- Salt and pepper to taste
Instructions
- Boil a large pot of salted water and cook the pasta until al dente; drain and set aside.
- In a large skillet, add olive oil and sauté onions until translucent, then add garlic and sauté for an additional minute.
- Stir in the cooked chicken pieces and pour in buffalo sauce; cook for a few minutes.
- In another pot, melt butter, then stir in flour and whisk until smooth. Gradually whisk in milk and let it thicken before adding cheese; stir until melted.
- Fold the cooked pasta into the skillet with the chicken, then pour the cheese sauce over everything and stir until evenly coated.
- Transfer to a greased baking dish, optionally sprinkle with extra cheese and breadcrumbs, then bake at 350°F (175°C) for 20-30 minutes until bubbly and golden.
Notes
Adjust the level of buffalo sauce according to your spice preference. Serve with a side salad or roasted vegetables.
