Ingredients

  • 2 cups high-protein flour (or a blend of all-purpose flour and vital wheat gluten)
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup Greek yogurt (or non-dairy yogurt)
  • 2 tablespoons honey or maple syrup
  • 1 cup fresh or frozen blueberries

Instructions

  1. In a large mixing bowl, combine the high-protein flour, baking powder, and salt.
  2. In another bowl, whisk together the Greek yogurt and honey until smooth. Gradually add this to the dry ingredients.
  3. Gently fold in the blueberries, being careful not to crush them.
  4. Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
  5. Divide the dough into 6-8 equal pieces, roll each into a ball, and poke a hole in the center to shape into a bagel.
  6. Bring a large pot of water to a simmer and boil the bagels for 2-3 minutes on each side.
  7. Place the bagels on a lined baking sheet and bake in a preheated oven at 400°F (205°C) for 20-25 minutes or until golden brown.
  8. Allow to cool slightly before enjoying or storing.

Notes

Make a double batch; they freeze beautifully. Serve warm with cream cheese or honey.
