- 2 cups high-protein flour (or a blend of all-purpose flour and vital wheat gluten)
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 cup Greek yogurt (or non-dairy yogurt)
- 2 tablespoons honey or maple syrup
- 1 cup fresh or frozen blueberries
Instructions
- In a large mixing bowl, combine the high-protein flour, baking powder, and salt.
- In another bowl, whisk together the Greek yogurt and honey until smooth. Gradually add this to the dry ingredients.
- Gently fold in the blueberries, being careful not to crush them.
- Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
- Divide the dough into 6-8 equal pieces, roll each into a ball, and poke a hole in the center to shape into a bagel.
- Bring a large pot of water to a simmer and boil the bagels for 2-3 minutes on each side.
- Place the bagels on a lined baking sheet and bake in a preheated oven at 400°F (205°C) for 20-25 minutes or until golden brown.
- Allow to cool slightly before enjoying or storing.
Notes
Make a double batch; they freeze beautifully. Serve warm with cream cheese or honey.
