Ingredients

  • 1 lb steak (chuck or brisket)
  • 2 large onions (Vidalia or yellow)
  • 1 tablespoon fresh thyme or rosemary
  • 1 package puff pastry (store-bought)
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce

Instructions

  1. In a large skillet over medium heat, melt a tablespoon of butter. Add sliced onions and sauté until golden brown, about 15-20 minutes.
  2. Increase heat to medium-high, add bite-sized chunks of steak, and sear until browned on all sides. Reduce heat and add caramelized onions back.
  3. Pour in beef broth and Worcestershire sauce, add fresh thyme, salt, and pepper, and let simmer for 30 minutes.
  4. Roll out chilled pastry on a floured surface and line a pie dish with half.
  5. Fill the pastry-lined dish with the warm filling, cover with remaining pastry, seal edges, and cut slits for steam to escape.
  6. Preheat oven to 400°F (200°C) and bake for 25-30 minutes until crust is golden brown. Allow to cool slightly before serving.

Notes

Ensure the filling is at room temperature before adding to the pastry to prevent sogginess. Use an egg wash for a golden crust.
