Ingredients

  • Leftover steak, chopped into bite-sized pieces
  • 1 cup onions, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 8 oz fresh mushrooms, sliced
  • 4 cups beef broth or stock
  • 1 tsp fresh thyme
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup red wine (optional)
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Gather all your ingredients. Dice the leftover steak into bite-sized pieces, chop the onions, garlic, carrots, and celery.
  2. In a large pot, heat a splash of olive oil over medium heat. Add the onions and sauté until translucent. Then, throw in the garlic, cooking just until fragrant—about 30 seconds.
  3. Toss in the diced carrots and celery, stirring them into the mix. Let them sauté for another 5 minutes until they soften slightly.
  4. Add the chopped mushrooms, allowing them to sweat and turn golden brown.
  5. Time to add the leftover steak! Stir it into the pot. If using red wine, pour it in now, scraping up any bits from the bottom of the pot.
  6. Add your beef broth or stock to the pot, ensuring everything is submerged. Bring it to a gentle boil.
  7. Toss in fresh thyme and season generously with salt and pepper. Once boiling, reduce the heat and let it simmer for about 20 minutes.
  8. Just before serving, stir in freshly chopped parsley and adjust seasoning if necessary.
  9. Ladle the soup into bowls and serve with crusty bread or a dusting of grated Parmesan cheese.
