- 1 medium green cabbage, chopped
- 2 medium carrots, sliced

Instructions
- Prepare your ingredients by chopping the cabbage, slicing carrots, and dicing onions and garlic.
- In a large pot, heat olive oil over medium heat and sauté the onions until translucent.
- Add garlic and carrots, cooking until the carrots soften.
- Push the veggies to one side and add the ground beef, browning it completely.
- Add the chopped cabbage and stir until it wilts slightly.
- Pour in the beef broth, and add bay leaves and thyme. Bring to a gentle boil, then reduce to a simmer.
- Let it cook for 30-40 minutes, allowing the flavors to meld.
- Taste and adjust seasoning as needed.
- Allow the soup to rest before serving for deeper flavor.
