Ingredients

- 1 lb ground beef (or ground turkey)
- 2 bell peppers (red, yellow, or green)
- 8 oz sliced mushrooms (cremini or button)
- 1 red onion
- 2 tbsp olive oil
- 2 tsp cumin
- 2 tsp paprika
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 1 tsp salt
- 4 oz crumbled feta cheese
- Fresh herbs (parsley or cilantro)
Instructions
- Chop the veggies into bite-sized pieces and measure out your spices.
- In a large skillet, heat olive oil over medium-high heat. Add the ground beef, season with salt, pepper, cumin, and paprika. Cook until browned, about 6-8 minutes.
- Add sliced onions and mushrooms to the beef, cooking until onions are translucent and mushrooms are tender, about 5 minutes.
- Add bell peppers and cook for another 3-4 minutes until they soften slightly.
- Remove from heat and gently fold in crumbled feta cheese.
- Serve the mixture over quinoa or brown rice, garnished with fresh herbs and a drizzle of olive oil.
