A delightful dish featuring spiced shrimp and fluffy couscous, rich with North African flavors.
Ingredients

- 1 lb fresh shrimp, peeled and deveined
- 1 cup couscous
- 1 cup vegetable or chicken stock
- 2 tbsp harissa paste
- 2 cloves garlic, minced
- 1 shallot, chopped
- 1 tbsp olive oil
- Fresh cilantro or parsley, chopped
- Lemon, for squeezing
- Salt and pepper, to taste
Instructions
- Rinse shrimp under cold water and pat dry. Season with salt and pepper.
- Bring stock to a boil, add couscous, cover and remove from heat. Let it steam for about 5 minutes.
- In a skillet, heat olive oil and sauté garlic and shallots until fragrant (about 2 minutes).
- Add shrimp and cook for 2-3 minutes on each side until bright pink. Add harissa paste and stir to coat.
- Fluff couscous and mix in shrimp and aromatics. Stir in fresh herbs and lemon juice.
- Serve hot, garnished with additional herbs and lemon wedges.
Notes
Avoid overcooking the shrimp to maintain tenderness. Use stock instead of water for a richer flavor in the couscous.
