Harissa Shrimp & Couscous Bowls

Description

A delightful dish featuring spiced shrimp and fluffy couscous, rich with North African flavors.


Ingredients

  • 1 lb fresh shrimp, peeled and deveined
  • 1 cup couscous
  • 1 cup vegetable or chicken stock
  • 2 tbsp harissa paste
  • 2 cloves garlic, minced
  • 1 shallot, chopped
  • 1 tbsp olive oil
  • Fresh cilantro or parsley, chopped
  • Lemon, for squeezing
  • Salt and pepper, to taste

Instructions

  1. Rinse shrimp under cold water and pat dry. Season with salt and pepper.
  2. Bring stock to a boil, add couscous, cover and remove from heat. Let it steam for about 5 minutes.
  3. In a skillet, heat olive oil and sauté garlic and shallots until fragrant (about 2 minutes).
  4. Add shrimp and cook for 2-3 minutes on each side until bright pink. Add harissa paste and stir to coat.
  5. Fluff couscous and mix in shrimp and aromatics. Stir in fresh herbs and lemon juice.
  6. Serve hot, garnished with additional herbs and lemon wedges.

Notes

Avoid overcooking the shrimp to maintain tenderness. Use stock instead of water for a richer flavor in the couscous.
