- 8 oz egg noodles (or wide pasta/zucchini noodles)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)

Instructions
- In a large skillet, heat olive oil over medium heat. Add chopped onions and sauté until translucent.
- Incorporate sliced mushrooms and cook until they release moisture and brown.
- Push the vegetables to one side and add ground beef, breaking it up and cooking until browned. Season with salt and pepper.
- Add minced garlic and cook for about a minute until fragrant.
- Pour in beef broth and stir, letting it simmer for a few minutes.
- Lower the heat and fold in sour cream until creamy and smooth.
- Cook the noodles according to package instructions, then drain and fold them into the stroganoff.
- Garnish with chopped parsley and serve hot.
Notes
