- 1 teaspoon baking soda
- 1 tablespoon ground ginger
- 1 tablespoon ground cinnamon
- ½ teaspoon ground cloves
- ½ teaspoon salt
- ½ cup unsalted butter
- ¾ cup brown sugar
- 1 large egg
- ¼ cup molasses

Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, spices, and salt.
- In a large bowl, beat together the softened butter and brown sugar until light and fluffy.
- Mix in the molasses and the egg until fully combined.
- Gradually add the dry mixture to the wet, mixing until no flour streaks remain.
- Scoop out tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheets.
- Bake the cookies for 8-10 minutes or until the edges are set but the center is still soft.
- Immediately upon removing cookies from the oven, press a chocolate kiss into the center of each cookie.
- Allow them to cool slightly on the sheet before transferring to a wire rack.

Notes
For a dairy-free version, substitute the butter with coconut oil and use dairy-free chocolate kisses. Do not overbake; the cookies should remain soft.
