- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons melted butter
- Cooked bacon, chopped (amount to preference)
Instructions
- Cook bacon in a skillet until crispy, then chop into pieces.
- In a large bowl, whisk together the flour, sugar, baking powder, and baking soda.
- In another bowl, mix buttermilk, egg, and melted butter until well combined.
- Pour the wet ingredients into the dry ingredients, folding gently until just mixed.
- Stir in crumbled bacon.
- Heat a skillet over medium heat and grease lightly with butter. Pour ¼ cup of batter for each pancake.
- Cook until bubbles form on the surface (2-3 minutes), then flip and cook for another 1-2 minutes until golden brown.
- Serve stacked with maple syrup and additional bacon bits on top.
Notes
Do not overmix the batter; small lumps are okay for fluffy pancakes. Allow the batter to rest for about 5 minutes before cooking.
