Ingredients

  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • Cooked bacon, chopped (amount to preference)

Instructions

  1. Cook bacon in a skillet until crispy, then chop into pieces.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and baking soda.
  3. In another bowl, mix buttermilk, egg, and melted butter until well combined.
  4. Pour the wet ingredients into the dry ingredients, folding gently until just mixed.
  5. Stir in crumbled bacon.
  6. Heat a skillet over medium heat and grease lightly with butter. Pour ¼ cup of batter for each pancake.
  7. Cook until bubbles form on the surface (2-3 minutes), then flip and cook for another 1-2 minutes until golden brown.
  8. Serve stacked with maple syrup and additional bacon bits on top.

Notes

Do not overmix the batter; small lumps are okay for fluffy pancakes. Allow the batter to rest for about 5 minutes before cooking.
