  • Author: clara

  • Yield: 4 servings 1x
  • Diet: Vegetarian

Description

A comforting breakfast blend of rich espresso and hearty baked oats, perfect for cozy mornings and gatherings.

Ingredients

Scale
  • 2 cups rolled oats
  • 1 cup brewed espresso or strong coffee
  • 2 cups milk (or plant-based alternative)
  • 2 large eggs
  • Sweetener of choice (maple syrup or honey)
  • Optional: dark chocolate chips or walnuts

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish.
  2. In a mixing bowl, combine rolled oats, brewed espresso, milk, eggs, and sweetener. Stir until well combined.
  3. If desired, fold in optional ingredients like chocolate chips or nuts.
  4. Pour the mixture into the prepared baking dish, spreading it evenly.
  5. Bake for 30-35 minutes, until the top is golden and a toothpick comes out clean.
  6. Allow to cool slightly before serving. Serve warm with a drizzle of maple syrup or coconut yogurt.

Notes

Let the oats absorb liquid for about 10 minutes before baking for softer texture. Store leftovers in an airtight container for up to four days, or freeze individually for easy breakfasts.
