Instructions
- Chop all your vegetables into uniform bite-sized pieces.
- Heat olive oil in a large pot over medium heat, add onions and garlic, cooking until translucent (3-4 minutes).
- Add chopped carrots and celery, cooking until softened (about 5 minutes).
- Stir in diced tomatoes and cook for a minute.
- Pour in the vegetable stock and bring to a gentle simmer.
- Add thyme, bay leaves, and any optional add-ins like beans.
- Let the soup simmer on low for 20-30 minutes to develop flavor.
- Stir in chopped parsley at the end before serving.
