  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 5 garlic cloves, whole
  • 2 bay leaves
  • 1 sprig fresh thyme
  • 1 sprig fresh rosemary
  • 12 tablespoons apple cider vinegar or lemon juice
  • Water
  • Optional: Sautéed mushrooms (shiitake or oyster) for added flavor

Instructions

  1. Prepare the Bones: Ensure the turkey bones are clean and free of excess fat. Optionally, roast them in the oven for 30 minutes at 400°F (200°C).
  2. Sauté Aromatics: In a large stockpot, heat olive oil over medium heat. Add chopped onions, carrots, and celery; cook until softened.
  3. Add Garlic and Herbs: Toss in the whole garlic cloves and herbs, sautéing them until fragrant.
  4. Combine Everything: Add turkey bones, cover with water, and add apple cider vinegar. Bring to a gentle simmer.
  5. Skim and Reduce: Skim off foam and let the broth simmer for at least 240 to 360 minutes (4 to 6 hours).
  6. Strain and Store: Strain the broth through a fine-mesh sieve into a bowl and discard solids. Cool before storing.
  7. Enjoy: Use immediately in recipes or store in the refrigerator for up to a week or freeze for later use.

Notes

Avoid using too much water; just enough to cover the bones and vegetables is ideal. Taste the broth during cooking to adjust seasoning.
