Ingredients

  • 8 ounces cream cheese (or soft goat cheese)
  • 10 ounces fresh mushrooms (cremini or button)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 garlic clove, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped parsley
  • 12 tablespoons sour cream or Greek yogurt
  • 1/2 cup roasted red peppers, diced small
  • 1 tablespoon chopped chives
  • Salt and black pepper, to taste
  • 1 teaspoon smoked paprika
  • Optional: shredded chicken, smoked salmon, or chopped roasted turkey
  • Optional add-ins: sun-dried tomatoes, toasted pine nuts, or pesto

Instructions

  1. Clean and slice the mushrooms. Heat olive oil and butter in a skillet over medium heat. Add mushrooms with a pinch of salt and sauté for 6–8 minutes. Add minced garlic in the last minute, then finish with lemon juice and parsley.
  2. In a bowl, beat cream cheese until smooth. Mix in sour cream for silkiness. Fold in cooled sautéed mushrooms, chives, roasted red peppers, and smoked paprika. Adjust seasoning as necessary.
  3. Lay a tortilla flat and spread an even layer of the mushroom-cheese mixture, leaving a one-inch border. If using protein, add it now. Roll the tortilla tightly.
  4. Wrap the rolls in plastic wrap and chill for at least 30 minutes. To serve, unwrap and slice each roll into 1-inch pinwheels.
  5. Optionally brush with melted butter or olive oil and garnish with herbs and paprika before serving.

Notes

For best results, refrigerate thoroughly before slicing to ensure clean edges. Experiment with different herbs and vegetables for variety.
