Ingredients

- 1 lb ground beef (or turkey/chicken/plant-based alternative)
- 8 flour or corn tortillas (or mini taco shells)
- 1 bell pepper, diced
- 1 cup diced tomatoes
- 1 small onion, diced
- 1 cup shredded cheddar or Mexican cheese blend (or dairy-free cheese)
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp garlic powder
- Fresh cilantro or green onions, for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Prepare the tortillas by cutting each into a circle slightly larger than the muffin tin holes. Press into the muffin tin to form cups.
- In a skillet, heat olive oil over medium heat. Sauté onions until translucent.
- Add ground meat and season with spices, cooking until done.
- Stir in bell peppers and tomatoes, cooking until slightly softened.
- Spoon the mixture into the tortilla cups and top with cheese.
- Bake for 12-15 minutes until tortillas are golden and cheese is melted.
- Let cool briefly before removing cups. Top with desired garnish.
Notes
For extra crunch, brush the edges of the tortillas with oil before baking and avoid overfilling the cups.
