- 1 cup Medjool dates, pitted and chopped
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 1 cup all-purpose flour
- 1 tsp baking soda
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup heavy cream
- 1 cup sugar (for caramel sauce)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- Soak the chopped dates in boiling water with baking soda for about 15 minutes.
- Beat together softened butter and brown sugar until light and fluffy.
- Beat in the eggs one at a time and add vanilla extract.
- Sift in the flour and mix until just combined; do not overmix.
- Gently fold in the soaked dates and their liquid.
- Pour the batter into the cake pan and smooth the top.
- Bake for 30-35 minutes or until a skewer inserted into the center comes out clean.
- For the caramel sauce, heat sugar in a saucepan until it melts; stir in heavy cream until smooth.
- Cool the cake slightly before transferring it to a wire rack; drizzle with caramel sauce and serve.
Notes
For a dairy-free version, use coconut oil instead of butter and almond milk for the caramel sauce.
