  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup heavy cream
  • 1 cup sugar (for caramel sauce)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Soak the chopped dates in boiling water with baking soda for about 15 minutes.
  3. Beat together softened butter and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time and add vanilla extract.
  5. Sift in the flour and mix until just combined; do not overmix.
  6. Gently fold in the soaked dates and their liquid.
  7. Pour the batter into the cake pan and smooth the top.
  8. Bake for 30-35 minutes or until a skewer inserted into the center comes out clean.
  9. For the caramel sauce, heat sugar in a saucepan until it melts; stir in heavy cream until smooth.
  10. Cool the cake slightly before transferring it to a wire rack; drizzle with caramel sauce and serve.

Notes

For a dairy-free version, use coconut oil instead of butter and almond milk for the caramel sauce.
