- 3–4 lbs Beef Chuck Roast
- 4 medium Yukon Gold or Russet Potatoes, diced
- 4 medium Carrots, sliced
- 1 large Yellow Onion, chopped
- 4 cloves Garlic, minced
- 4 cups Beef Broth
- 2 sprigs Fresh Rosemary
- 2 sprigs Fresh Thyme
- Salt and Pepper, to taste
Instructions
- Trim excess fat from the beef and season it well with salt and pepper.
- In a skillet over medium-high heat, sear the roast on all sides until golden brown.
- Place chopped onions, diced potatoes, and sliced carrots in the slow cooker.
- Lay the seared roast on top and sprinkle with minced garlic, herbs, and additional seasoning.
- Add beef broth until the ingredients are mostly submerged.
- Set the slow cooker on low for 8 hours or high for 4 hours.
- Once done, let the roast rest for at least 10 minutes before slicing.
- Serve sliced, topped with vegetables and gravy.
Notes
For variations, consider using pork instead of beef or substituting potatoes with cauliflower for a low-carb option.
