Ingredients

  • 34 lbs Beef Chuck Roast
  • 4 medium Yukon Gold or Russet Potatoes, diced
  • 4 medium Carrots, sliced
  • 1 large Yellow Onion, chopped
  • 4 cloves Garlic, minced
  • 4 cups Beef Broth
  • 2 sprigs Fresh Rosemary
  • 2 sprigs Fresh Thyme
  • Salt and Pepper, to taste

Instructions

  1. Trim excess fat from the beef and season it well with salt and pepper.
  2. In a skillet over medium-high heat, sear the roast on all sides until golden brown.
  3. Place chopped onions, diced potatoes, and sliced carrots in the slow cooker.
  4. Lay the seared roast on top and sprinkle with minced garlic, herbs, and additional seasoning.
  5. Add beef broth until the ingredients are mostly submerged.
  6. Set the slow cooker on low for 8 hours or high for 4 hours.
  7. Once done, let the roast rest for at least 10 minutes before slicing.
  8. Serve sliced, topped with vegetables and gravy.
