Ingredients

- 1.5 to 2 pounds flank steak or sirloin, sliced against the grain
- 2 to 3 bell peppers (red, green, or yellow), sliced
- 1 large onion, sliced
- 3 cloves of garlic, minced
- 1/4 cup soy sauce (or tamari for gluten-free)
- 1 tablespoon cornstarch mixed with 2 tablespoons of water (for thickening)
- Salt and pepper to taste
- Optional: A splash of Worcestershire sauce or balsamic vinegar
Instructions
- Slice the beef against the grain and season with salt and pepper, then set aside.
- Heat a skillet over medium-high heat, add oil, and sear the beef for 2-3 minutes until browned.
- Transfer the beef to the slow cooker. In the same skillet, add sliced onions and peppers, cooking for a few minutes to soften.
- Add minced garlic to the skillet and cook for 30 seconds, then transfer to the slow cooker.
- Pour the soy sauce and any other seasonings over the ingredients in the slow cooker and stir gently to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- When nearly finished, mix the cornstarch and water until smooth, and add this mixture to the slow cooker to thicken the sauce, cooking uncovered for another 30 minutes.
- Taste and adjust seasoning if necessary, then serve.
Notes
For best results, ensure meat is sliced thinly and seasoned properly at each stage. Adjust cooking times based on your slow cooker model.
