- 3 lbs beef chuck roast
- 2 chipotle peppers in adobo sauce, diced
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp dried oregano
- 2 cups beef broth
- Tortillas (soft corn or flour)
Instructions
- Season the roast with salt and pepper, then sear in a hot skillet with oil until browned.
- Sauté onions and garlic in the same pot until fragrant.
- In a slow cooker, combine seared meat, sautéed onion and garlic, chipotle peppers with adobo sauce, cumin, oregano, and beef broth.
- Cook on low for 8 to 10 hours until tender.
- Shred the beef with two forks and mix with the juices, then serve in warm tortillas with toppings.
Notes
For variations, substitute chipotle with smoked paprika or brisket instead of chuck roast.
